As seen on the screenshot, there seems to be two ways to setup handling large amounts of data.

Where is the documentation explaining this?

its vague, because they don't think its their baby. Maybe they should at least put out or endorse an end to end solution with the 2 major CF DBs MySQL and SQL Server. CF needs to document itself more as a solution to common problems.

I agree better documentation would help. But to be clear, those two sets of options are for two different datatypes - Binary Large OBjects (BLOB) and Character Large OBjects (CLOB).
